Apple almond cake: a slice of home 

Apple pie, sponge or crumble all scream snuggle up at home on a cold winters eve to me. With the season’s changing and my return from Vietnam a slice of apple sponge was called for. Topped off with home made custard.

Ingredients

5 apples

1 cup of sugar

2 teaspoons of cinamon

2 teaspoons of almond extract

1.5 cups of flour

120gs of butter

Juice of 1/2 a lemon

1/2 cups of milk

Ground almond

2 teaspoons of baking powder.

Step 1. Peel and slice the apples into chunks.

Step 2. Use butter to grease a cake tin. Sprinkle with sugar and ground almond.

Step 3. Cream the butter and sugar together.

Step 4. Add the eggs and whisk.

Step 5. Add flour and milk and mix.

Step 6. Add cinnamon, baking powder, almond extract and lemon juice whilst mixing.

Step 7. Add the chopped apples and mix.

Step 8. Transfer to a baking tin prepared earlier.

Step 9. Sprinkle the ground almonds on top of the mixture.

Step 10. Bake in the oven for around 45 minutes on 160 degrees.

Try not to eat it all at once. I couldn’t wait to take a photo. just couldn’t resist having a slice straight from the oven.
